Is anyone else super stressed lately now that school and activities are back in full swing?  My daughter has soccer practices and games, CCD and piano lessons on weeknights and they keep us running all over the place.  

For the first few weeks I gave in to the ease of the drive-thru more often than I care to admit but I quickly realized I had to figure something else out.  I like to eat dinner with Taylor every night at the table.  I think that is important bonding time and in order to make that happen I knew that I would need to be better prepared.  I started meal planning, making things in my slow cooker (that I can set in the morning so they will be ready when I get home) and also implementing meal hacks to create some effortless meals.  

One of my favorite tricks for reducing cooking time is to buy a rotisserie chicken and use it to create other easy meals.  I can run into Walmart on my way home, head over to the deli department (which thankfully is right near the front of the store) and grab a Marketside rotisserie chicken meal which comes with a 2 lb side of potato salad, macaroni salad or cole slaw along with a 2 liter of Coca-Cola.  The signage at Walmart makes it easy for people to find what to make for dinner with little effort.  They also have pizza meals that come with a 16″ pepperoni pizza or cheese pizza with  a 2 liter of Coca-Cola.  I will definitely be buying that one in the future as well.

This past week I made a delicious Asian Chicken Salad and it was totally delicious.  I stopped at Walmart on my way back from Taylor’s piano lesson and picked up everything I needed in order to get a quick and tasty dinner on the table.   This included the Marketside rotisserie chicken deal and the ingredients I would need to make my salad and dressing.

I began by rinsing off my lettuce.

Next, I separated the meat from the chicken.

Then, I added matchstick carrots, scallions, chow mein noodles and the chicken to the top of my lettuce.  (I like to wait until I am seated at the table to stir everything up and add dressing so nothing gets soggy.)

Salad

For the dressing I took a clean and empty mason jar and added 2/3 cup of rice vinegar, 1/4 cup of soy sauce, 2 tablespoons of freshly grated ginger, 2 tablespoons of honey, 2 tablespoons of sesame oil, 3/4 cup of olive oil and a teaspoon of sesame seeds.  I love how pretty it looks with the oils are all layered.  When you are ready to use it just make sure the cap is on tight and give it a few good shakes.

Thanks to Walmart I was able to put a decent meal on the table in under 10 minutes.

One of my favorite pictures of my husband is the one shown above.  Even as a kid he loved the water and was a total hustler.  He would go down to the docks in Sheepshead Bay, Brooklyn and work on fishing boats.  He loved it and  also enjoyed making some extra money.  Today, he is the same way.  He works hard and he still LOVES to fish.  His rugged hobbies are a nice compliment to my girlish ways and they help to keep Taylor and I anchored.  We love to do girly-girl things like shop and get our nails done but we also indulge in Yankees games, Monster Truck shows, go carts and fishing often thanks to Billy.  He helps to keep us well-rounded.

When searching for the perfect gift for my hubby for Father’s Day present I started (and ended) my search at the Macy’s cologne counter.  I found the new scent by Nautica called Life, smelled it and fell in love.

Happy Belated Memorial Day!  I hope you all enjoyed your long weekend and spent some time outdoors in the Sunshine!  

Now that the warmer weather is here, it’s time to revamp our beauty routines.  Just like we have packed away our heavy sweaters, we need to also change up our hair and makeup.  Instead of heavy foundation and dark lips – it is now time for dewy, tinted moisturizer and lip gloss.  I have started embracing my curls and rocking beachy, waves instead of flat-ironing my hair.  

In order to create my fabulous waves I used some of the products from John Frieda’s Beach Blonde Collection.  Don’t let the name fool you!  They work perfectly on any hair color.  I picked up the shampoo, conditioner and sea salt spray during my trip to Target for the Lily sale and I am obsessed with them!  They smell totally delicious (like a mojito almost) and create a great texture for natural looking beachy waves.

 To achieve my look I completed the following steps:

1.  I washed with the Cool Dip shampoo and Smooth Seas conditioner.  Afterwards, I gave it a quick blow dry to speed up the process but you if you have the time I would definitely let it air dry.  It is better for your hair and it will help your curls have more volume.

2.  After it was dry, I grabbed one inch sections and wound them around the base of a closed curling iron.  I don’t use my clamp.  I didn’t worry about making my curls uniform.  These waves are beachy and casual and this is an unstructured look.

3.  Once I was done curling my hair I sprayed it with the Sea Salt Spray.  Then, I used my hands to scrunch and ran my fingers through the curls to loosen them up.  The whole process took me about 15 minutes!
