Happy Friday!

Happy Friday Loves!  Sorry about my blogging laziness this week!  I had Monday off from work. It looked like this:

If you are thinking right now that sweatpants and couch snuggling have been a reoccurring theme on ALG lately, you are not wrong.  I have been doing a lot of vegetating during the Winter of 2015 and I love it!

I am linking up with LaurenAmanda and Natasha today for my Friday Faves.  Here goes…

1.  Trivia Crack.  Nadine introduced me to this game and I have been playing it nonstop.  It is totally addicting.  I also got my hubby and co-workers hooked.  If you would like to join in on the fun my screenname is alittleglitter.   🙂

2.  Kevin Hart.  Billy and I ventured off the couch the other night.  We actually managed to go to dinner and a movie and I WORE REAL PANTS.  No sweatpants.  We saw the Wedding Ringer and I laughed so hard at certain parts I cried.  Kevin Hart is hiliarious.  I cant wait to see Get Hard!  Will Ferrell and Kevin Hart should make for a legendary combination.

3.  Purse Storage.  When I am done lazing about I intend to revamp my closet.  I love my bags and having them all jammed up in my closet makes me sad.  They need to be properly stored.  I really need to do something like this:

531414e4697ab00e27000a0c._w.540_s.fit_4.  Trader Joe’s Mahi Mahi Burgers.  I have been meaning to try these bad boys for a while.  I finally bought them and I cant wait to make them this weekend!

5.  SNL.  This video was hilarious.

Enjoy your weekend!

Fluffy Delicious Whole Wheat Pancakes

This weekend I set out to make some healthy meals.  I really wanted to try Christina’s recipe for Gluten Free Almond Coconut Chocolate Chip Pancakes but my local Trader Joes was out of Almond Meal.  (I am going to make them next weekend though Christina!) Instead, I followed this recipe from Sally’s Baking Addiction for Whole Wheat Banana Pancakes and it was a HUGE hit!  These pancakes where fluffy and moist.  I cant take any credit for the recipe since I really didn’t modify it at all (except for the addition of some blueberries).  There wasn’t anything about it that I felt the need to change.

Here is the cast of characters:

Cast of Characters

I had most of the ingredients already in my pantry.  It called for milk, eggs, greek yogurt, a banana, vanilla extract, brown sugar, baking powder, cinnamon and whole wheat flour.  I also threw in a few blueberries and they were delicious.

I was nervous about how these pancakes would turn out while they cooked but they tasted fabulous.

I put some bananas on top and paired them with Trader Joe’s chicken breakfast sausage. (Sidenote, my daughter begged me not to buy the sausage since it is a salmon color that is extremely unappetizing in the package.  Once I browned them and she ate one, she proclaimed that she loved them and could eat them for every meal.  I was glad I took the chance and will definitely make them again.)

Trader Joe’s Standouts!

Recently, I decided to give my diet an overhaul.  This was a long Winter and I had fallen into the habit of making unhealthy choices (like eating sleeves of Girl Scout Cookies on a whim).  Even though it is still cold (20 degrees this morning in New York) it is officially Spring and I am turning over a new leaf.  I have taken on the challenge of finding new recipes and making meals that are healthy, delicious and quick.  It is difficult to check all those boxes – believe me.  Most things that are delicious are not healthy.  Many things that are healthy are not quick (I’m talking to you 50 minute basmati rice).

One change I have implemented is to eat things that are organic and have no preservatives whenever possible.  I am also buying turkey instead of beef (chopmeat, bacon, etc.) and substituting in whole wheat for white (bread, flour).

I have been making a meal plan for the week and shopping at Trader Joes on the weekend for ingredients.  I have found a lot of great recipes on Pinterest, too.

At first my husband was skeptical.  He is a meat and potatoes guy.  He loves to eat and did not want to sacrifice taste for health but to my great surprise he has enjoyed most of the things I have been cooking lately.

Some of the items that have earned pleasant reviews from me, my eight year old and my picky, foody husband are:

Turkey Meatballs

These turkey meatballs are amazing!  So so so good!  I threw them (still frozen) into my slow cooker with a jar of the sauce below and we were ready to eat when we got home.  These definitely were easy, quick and delicious!

Marinara Sauce

This sauce is so yummy.  I highly recommend it.

Brown Rice Quinoa Pasta

Whole wheat pasta is the change that met with the most resistance from my family.  I tried to switch us from regular pasta previously and the brand or type that I bought was chalky, gummy and horrific.  We assumed all healthy pasta was terrible and refused to sacrifice taste.  I picked this up at Trader Joes over the weekend and I could not even tell the difference between this and regular pasta!

Turkey Bacon

This turkey bacon was delish!  Two thumbs up!

Do you guys have any tips about healthy eating that you wish to share?  Any small changes I make or recipes that you love?  What are your favorite items from Trader Joes?
